Rooted in the Bruce

“Why Paisley?” we’ve been asked and quite simply, it’s our home. Jen grew up here; showing at the fall fairs, sledding the local trails, and even going to Beef Fest. We decided to open in Arran-Elderslie, so we could be part of and give back to the community where Jen grew up. And where better to open a restaurant centred on local food than in the agriculture heartland of the Bruce?




Italian Inspired

It started with pizza. Our goal was to bring world-class pizza with a fun, casual atmosphere to Bruce County. Then, Chris started making meatballs with the most flavourful beef we’d ever tasted, dabbling with pasta, and making his own cheese. Our menu is Italian-inspired but with a whole lot of local heart and specials that showcase Chris’ British roots and global experience.  

A Tradition Evolving As We Go

For 30 years, the Centigoyas served up warm hospitality in this building. When we took ownership in the fall of 2019, we set out to build on that warmth with a place to enjoy good company, great food and a pub atmosphere. When the pandemic hit, we pivoted and opened for takeout only on April 16, 2020. With each lifted restriction, we added something new to the restaurant until we finally got to where we are today. It’s been a little scrappy and a roller coaster at times, but we’ve continued to adapt and are grateful for the wonderful community around us.

Meet the Owners

Chris Shaw

Chris is the working owner manager. A professional chef with 27 years of experience, Chris has worked with many different styles of cuisine and has managed kitchens and restaurants in Europe, Australia and Canada. He was born in Northern England in a caring, hard-working family, and set out to travel the world at a young age. Chris moved to Canada in 2005. He loves the creativity of cooking and sharing this experience with others. When he’s not in the kitchen, Chris loves being outdoors, so Paisley has been the perfect location to settle down and open his restaurant. Chris and Jen can often be found walking around town with Molly, their Boxer x Boston Terrior.

 
 

Jennifer Christie

Jen is an experienced marketing professional, raised outside Tara on a sixth generation dairy and grain farm. Before moving back “home”, Jen worked for John Deere and 4-H Canada. She is a proud 4-H alumna and continues to be involved in the agriculture industry through the Ag Women’s Network, which she founded. Jen is also an avid traveller and enjoys writing and reading. When not in the restaurant, you can find Jen on the rail trail, on the river or at the farm.
